POTATOES, ONIONS AND TOMATOES

Coat a casserole dish with butter. Cook and slice 7 potatoes. Place in bottom of casserole. In skillet heat 3 tbsps. butter and 2 tbsps. olive oil. Slice 2 yellow onions and 5 diced tomatoes (salted) and 2 garlic cloves. Saute veggies until soft. Cover potatoes with onion and tomato mixture. Cover with Parmesan cheese. Repeat layers. Dot with butter. Cover and bake. 375 until bubbly. Biba on TV
