l/2 lb. asparagus per person
Italian dressing or French vinaigrette
fresh parmesan cheese
Blanch asparagus till almost tender, 3-4 mins. Drain and rinse with cold water to half cooking process. Pour Italian dressing over the asparagus. Let it marinate for 4 hrs. or overnight. Before serving sprinkle generously with Parmesan cheese.
