In a large skillet heat l tbsps. olive oil over med-low heat. Add 2 large onions, finely chopped; season with salt. Cook, stirring frequently until onions are carmelized, 35-40 mins. n a med saucepan combine 2-l/2 lbs. peeled and quartered yukon gold potatoes, 4 crushed garlic lcoves and enough water to cover by l inch. Bring to a boil; add salt. Cover; reduce ehat and simmer until tender, l5-20 mins. Drain, reserving l cup liquid. Return potatoes and ggarlic to pan. Add 2 tbsps. olive oil; season with salt. Mash until smooth, adding reserved liquid as needed. Stir in onions and serve immediately.
