l Easy Pie Crust (see recips)
3 large eggs
l cup light corn syrup
l/2 cup sugar
l stick melted butter
l tsp. grated orange peel
l tsp. ground cinnamon
l tsp. vanilla extract
l-l/2 cups coarsely chopped walnuts
Heat oven 400. Refrigerate pie crust l5 mins.
Whisk eggs in med bowl until well blended. Add corn suyrup, sugar, melted butter, orange peel, cinnamon and vanilla and whisk until smooth. Stir in walnuts. Pour walnut filling into chilled crust. Bake pie l0 mins. Reduce oven temp to 350. Continue baking pie until puffed and set in center when dish is gently shaken, about 40 mins longer. Cool pie completely on rack. Can be prepared l day ahead. Cover & store at room temp) Cut into wedges. Serves 8 Bon Appetit November 2000
