l large sweet onion such as Vidalia sliced
3 red tomatoes sliced
3 yellow tomatoes sliced
l lb. fresh mozarella in water drained sliced into rounds
l/2 cup thinly sliced fresh basil
3 tbsps. olive oil
2 tbsps. balsamic vinegar
Arrange onion slices on large platter. Top with red andyellow tomatoes then cheese. Sprinkle with basil, Drizzle oil and vinegar over. Sprinkle with s&p. Serve at room temp., within 2 hrs.
