3 lbs. ground beef
l-l/2 lbs. ground pork
4 eggs, beaten
4 galric cloves, minced
2 med. onions, minced
2 tbsps. freshly chopped basil
2 tbsps. freshly chopped flat leaf parsley
l cup grated parmesan cheese
5 slices whigte bread cut into bite size pieces
l/2 cup water more if needed
l/2 cup bread crumbs
l tsp. salt
l tsp. pepper
Heat oven 375. In a large bowl combine the ground beef and pork, beaten eggs, garlic, onions, basil,
parsley and parmesan cheese. In a parate bowl add water to the bread to soften then drain thoroughly.
Add the bread, bread crumbgs s&p to the meat mixture and combine thoroughly. The meatballs should
form easily into balls. Add more bread crumbs if too wet, another beaten egg if too dry. Place meatballs
on the top of drip through roasting pan and bake for l0 mins on each side or until meatballs are brown on
both sides and cooked through. Drain on paper towels and let cool. Freeze on cookie sheets for up to
two hrs. Transfer to freezer bags. (This step ensures that the meatballs won’t fuse together in the
freezing process and allows you to pull only the number of meatballs you want for each meal.
