2 boneless chicken breast halves with skin
l-l/4 tsps. dried rubbewd sage
l-l/2 tbsps. olive oil
l whole head garlic, separated into cloves (about l5) unpeeled
l/2 cup dry white wine
Preheat oven 400. Sprinkle chicken with sage, s&p. Heat oil in med. ovenproof skillet over med-high heat. Add chicken and saute until brown, about 3 mins. per side. Meanwhile boil garlic cloves in small saucepan of water for 2 mins. drain. Rinse under cold water to cool, peel. Arrange garlic cloves around chicken in skillet. Pour wine over. Cover skillet; bake chicken and garlic l0 mins. Uncover, baste chicken with pan juices. Bake chicken uncovered until cooked through about 8 mins. longer. Using tongs, transfer chicken to plates. Boil pan juices over high heat until slightly thickened, about 2 mins. Season to taste with s&-. Spoon garlic sauce over chicken. Serves 2 (can be doubled) Bon Appetit March l997
