9 to l0 lbs. mixed fish – cod, haddock, halibut, flounder , etrc.
2 quarts half and half
2 cans campbell’s cream of shrimp soup
6 med. onions, chopped
2 sticks butter
5 lbs. Maine potatoes, diced
Peel and cook potatoes until just cooked, but not mushy. Cook all fish in batches in microwave about
6-7 mins. per plateful. Drain potatoes. Melt butter in large pan and saute onions until soft and cooked
through but not browned. In large kettle add all ingredients and heat through but don’t boil. Serve
with oysterette crackers. This is a huge recipe and will serve l0-l2 generously. You can also serve “Green Onion & Sesame Corn Muffins”.
