2 lbs. winter squash, peeled & seeded
3 cloves garlic, minced
l/2 tsp. salt
l med. leek, washed & finely chopped
2 slices bacon, cut in l/2 inch pieces
l tbsps. butter
3 tbsps. sour cream
2/3 cup grated cheddar or Swiss cheese
s& p to taste
Preheat oven to 350. Cut squash into l” chunks. Combine with garlic
salt & l/4 cup water in pot. Cover & cook l5 mins. until squash is
firm-tender. Cook bacon until golden but not crisp & set aside. Add
l tbsps. butter to fat in skillet & saute leek, covered, over low
heat until soft & translucent. Transfer squash to shallow casserole
or gratin dish and mash with fork, leaving some chunks. Add leek,
bacon, sour cream, s&p. Top with grated cheese & cover with foil,
shiny side down. Bake l5 mins. Remove oil & b ake 5 to l0 mins.
