WILD RICE PILAF

1 tsp olive oil
1/4 cup minced onion
1 tsp. minced garlic
1/4 cup diced carrot
1/2 cup dry wild& white Uncle Ben”s rice

2 tbsps dry white wine
1 cup chicken broth
2 tbsp slivered almonds
1/2 tsp. minced fresh thyme
salt& pepper

Heat oil in saucepan over m-hi heat. Add onion carrot& garlic; cook until softened about 3 min.
Stir in rice to coat with oil and toast 1 min.
Deglaze pan with wine and cooked until absorbed. Stir in broth and bring to boil.
Cover pan,reduce heat to low and cook rice until tender 25-30 mins.
Stir in almonds. lemon juice& thyme and season rice with s&p.

SERVES 2. SERVE WITH FISH FLORENTINE
