l med onion finely chopped
l/4 cup butter cubed
l/4 cup flour
l tsp. dried parsley
l tsp. salt
l/2 tsp. pepper
l/2 fsp. dried thyme
3 cups milk
l can cream of mushroom soup undiluted
l cup sour cream
8 cups thinly sliced peeled potatoes
3-l/2 cups cubed cooked ham
2 cups shredded white cheddar cheese
In large sauce pan saute onion in butter until tender. Stir in the flour, parsley, s&p and thyme until blended. Gradually add milk. Bring to a boil; cook and stir for 2 mins. or until thickebned. Stir in thesoup. Remove from heat; stir in sour cream untill b lended. in a large bowl combine potatoes and ham. In greased l3x9″ baking dish; layer half of the potato mixture, cheese and white sauce. Repeat layers. Cover and bake at 375 for 30 mins. Uncover; bake 40-50 mins longer or until potatoes are tender.
