l/3 cup red wine
l/3 cup olive oil
2 cloves garlic, peeled an minced
l tbsps. grated orange rind
l/2 cup minced sage leaves
l/4 cup minced rosemary leaves
l tbsps. black peppercorns, crushed
Combine all ingredients. Refrigerate in airtight container for up to
3 days.
Excellent for: Flank steak;l-l/2-2 lbs. grilled 3-4 mins. per side.
Excellent for: 6-8 oz. pounded to l/4″ chicken breasts;marinate for
4-5 hrs. Grill over hot coals until tender, about 2-3 mins. per
side.
