2 9-oz. pkgs. cheese tortillini
3 tbsps. olive oil
l large onion, chopped
6 ozs. thinly sliced prosciutto, chopped
2 tbsps. minced garlic
l tsp. dried crushed red pepper
l tsp. ground black pepper
l cup dry white wine
2 cups sliced mushrooms
2 cups chopped red bell pepper
l cup chopped green onions
l cup fresh shelled peas or frozen
l-l/2 cups whipping cream
l/2 cup chopped fresh parsley
l/2 cup choppped fresh basil
l cup grated Parmesan cheese
Cook tortellini in large pot of boiling salted water until tender but still firm to bite, Drain. Hea oil in heavy large saucepan over high heat. Add onion, proscuitto, garlic, dried red pepper and black pepper. Saute until onion is golden brown, about l0 mins. Add wine and bring to boil. Add mushrooms, bell pepper, green onions and peas and simmer until almost all liquid evaporates, about 5 mins. Add tortellini, parsley, basil and Parmesan. Simmer until sauce coats pasta, about 4 mins. Season to taste with s&p. Transfer pasta and sauce to large bowl and serve.
