l lb. bacon slices diced
l large onion, chopped
8 ozs. Gruyere cheese, grated
l/2 cup minced fresh parsley
2 tbsps. chopped fresh basil or 2 tsp. dried, crumbled
6 large beefsteak tomatoes, cut into l/2″ slices

Fry bacon in heavy skillet over med. heat until crisp. DRain bacon
on paper towels. Pour off all but l/4 cup bacon drippings. Add
onion to drippings in skillet & saute until very soft, about l2 mins
Transfer to med. bowl. Crumble in bacon. Mix in cheese, parsley &
basil. (Can be prepared l day ahead) Preheat broiler. Arrange
tomatoes on cookie sheets. Season with s&p. Top each slice with
cheese mixture. Broil until cheese just melts. Serve warm or at
room temp.
