8 cups cubed Italian or French bread
3 cups chopped tomatoes
l cup minced fresh basil
l/2 cup thinly sliced red onion
l/2 cup olive oil
2 tbsps. cider or red wine vinegar
l/2 tsp. salt
l/2 tsp. pepper
l garlic clove minced
In a large bowl combine bread, tomatoes, basil and onion. In a small bowl whisk together the remaining ingredients; drizzel over bread mixture. Cover and let stand for 30 mins. before serving.
