THE MOST FUDGY BROWNIE EVER

3 sticks butter cut into pieces
l2 oz. fine quality bittersweet chocolate )not unsweetened) chopped
6 large eggs
l-l/4 cups cake flour (not self rising)
l cup plus 2 tbsps. unsweetened cocoa powder
3 cups sugar
l/2 tsp. salt
Heat oven 350. Butter and flour a l3x9″ metal pan (jelly roll pan works fine)
Melt butter with chocolate in very large bowl in microwave, stirring until smooth. Sift together flour and
cocoa powder in a partate bowl and stir into batter with sugar and salt.
BEFORE STIRRING IN FLOUR MIXTURE, ADD EGGS ONE A T A TIME AND MIX AFTER EACH
ADDITION. THEN add the flour with sugtar and salt. Pour batter into pan and bake in middle of oven
until top is firm and a tester inserted comes out with crumbs adhering, 40-50 mins. Cool completely
in pan on a rack about 2 hrs. before cutting into 20 or so squares.
This recipe is very rich, so cut into small squares. It is also extremely fudgy and delicious.
