l tbsp. olive oil
2 red bell peppers, thinly sliced
2 green or yellow bell peppers, thinly sliced
2 garlic clove,s minced
l/2 tsp. dried crumbled oregano
3 tbsps. red wine vinegar
4 6-oz. swordfish steaks (3/4″ thick)
Heat oil in heavy large nonstick skillet over medium high heat.
Add bell peppers and saute until almost tender, about 5 mins. Add
garlic and l tsp. oregano & saute until peppers are just ender,
about 3 mins. Add vinegar and cook until vinegar evaporates, about
2 mins. Season with s & p. Transfer to bowl. Preheat oven to 400.
Heat same skillet over high heat until hot. Add swordfish to
skilet & sear each side l min. Transfer fish to 9xl3″ bakng dish.
Season with s & p. Sprinkle fish with remaining 2 tsps. oregano.
Spoon peppers over fish. Bake until fish is cooked through, 8 mins.
