l-l/2 cups purchased duck sauce or plum sauce (about 2 l0-oz.jars)
l/4 cup soy sauce
l/4 cup white wine
Orange slices (optional)
24 chicken drumettes
Preheat oven to 350. Holding drumette at base and using small sharp
knife, push all meat toward top, forming “lollipop” shape. Repeat
with remaining drumettes. Space drumettes evenly on baking sheet.
Season with s&p. BAke 30 mins. basting drumettes once with pan
juices.
Combine duck sauce, soy sauce and white wine in med. bowl. Remove
chicken from oven. Spoon half of sauce over drumettes. Bake until
chicken is golden and crisp, about l5 mins. Using tongs, transfer
chicken to serving platter. Garnish with orange slices if desired
and serve, passing remaining sauce separately.
