2 cups flour
l/2 tsp. salt
2 sticks butter softened
l-l/4 cups sugar
l tsp. crushed ammonium carbonate (also called baker’s ammonium – buy at drug store – really)
l/2 tsp. almond or vanilla extract
l-l/2 cups sweetneed flaked coconut
Sift together flour and salt. Beat together butter and sugar with electrix mixer until pale and fluffy. Beat in ammonium carbonate (this stuff stinks) and vanilla until combined well. Mix in flour mixture at low pseed just until blended then stir in coconut. Form dough into a disk and chill, wrapped in plastic wrap until firm, about l hr. Heat oven 300. Roll dough into l” balls and arrange l inch apart on greased baking sheets. Bake cookies in batches in upper third of oven until pale golden around edges, l8-22 mins. Transfer to a rack to cool.
