two 28-oz. cans peeled whole tomatoes’
two 28-oz. cans crushed tomatoes
l tablespoon oregano
l tablespoon dried parsley flakes
s & p to taste
l tablespoon sugar
3 bay leaves
Mix all the above ingredients dtogether and leyt simmer for 3/4 hour then add two
cans tomato paste. Using paste can add 6 cups water to tomato mix and stir until bl ended thoroughly. Let simmer for l hour stirring occassionally
BASE;
l/2 cup good olive oil
12 cloves minced garlic
2 large onions chopped
l/2 lb. pancetta (Italian bacon) diced
Dice pancetta and render out in saute pan until crispy. Remove from pan and add olive oil and saute garlic and onions until cooked through. Add to sauce and continue cooking for l-l/2 hours more.
You can add meatballs at the end of all cooking.
