l tbsps. olive oil
4 cloves garlic, finely chopped
l small onion, chopped (about l/4 cup)
2 cans (28 oz. each) imported pear shaped tomatoes, drained
2 tbsps. chopped fresh basil
2 tbsps. chopped fresh oregano
l/2 tsp. salt
l/2 tsp. pepper
Heat oil in 3-qt. saucepan over med-high heat. Saute garlic & onion
in oil. Place tomatoes in food processor. Cover and process until
smooth. Stir tomatoes and remaining ingredients into mixture in
saucepan. Heat to boiling. Reduce heat. Simmer, uncovered, for
45 mins., stirring occasionally.
Makes about 4-l/2 cups of sauce.
