SUGAR GLAZED ROASTED CARROTS

l-l/2 lbs. med carrots, peeled and cut into 2xl/2 inch pieces
2 tbspss. butter, melted
ltbsps.s dark brown sugar
l/2 tsp., salt
l/2 tsp. pepper
heat oven 475. heat rimmed baking sheet in oven for l0 mins. Toss carrots, melted butter, sugar, salt and pepper in med bowl until
thoroughly combined. remove pan from oven and place carrots in single layer on hot baking sheet. roast until carrots are beginning
to brown on bottom about l5 mins. remove pan from oven toss carrots to redistribute and continue to roast until tender and deep amber in color about 3 mins. serves 4 to6
CUTA PEELED CATTROTY INTO THIRDS, WITH EACH PIECE MEASURING ROUGHLY TWO INCHES LONG. CUT EACH
PIECE IN HALF OR QUARTERS LENGTHWISE TO YIELD PIECES THAT ARE l/2″ THICK.
