l l-lb. butternut squash
2 tbsps. unsalted butter
l lb.onions, halved lenthwise, thinly sliced crosswise
3/4 lb. Grany Smith apples, peeled, cored, thinly sliced
3 tbsps. flour
l/2 cup chicken stock
3/4 cup breadcrumbs
3/4 cup coarsely grated sharp cheddar cheese (about 3 oz.)
6 lean bacon slices, cooked,crumbled
Preheat oven to 350. Butter l3x6″ oval bbaking dish. Peel butternut
squash. Cut squash lengthwise in half. Scoop out seeds and strings.
Thinly slice squash crosswise. Melt butter in heavy large skillet
over medium heat. Add onions & saute until tender, about l0 mins.
Toss apples with flour in medium bowl. Arrange half of squash in
bottom of prepared dish. Top with half of apple slices. Arrange
remaining squash slices over. Top with remaining apple slices. Cover
with onions. Pour stock over. Bake until squash is tender, about
45 mins. Maintain oven temp. Mix breadcrumbs, cheese and bacon in
small bowl. Sprinkle mixture over gratin. Bake 20 mins. Preheat
broiler. Broil until topping browns. Cool 5 mins. and serve.
