SPINACH STUFFED CHICKEN BREASTS

2 tsp. margarine
l/4 cup chopped onion
l/2 tsp. minced garlic
l l0 oz. pkg. frozen chopped spinach, thawed, squeeed dry
l/4 cup grated Swiss cheese
6 skinless boneless chicken breast halves
l/2 cup flour
l tbsps. chopped fresh tarragon
l to 2 tbsps. vbeggie oil
l cup chicken stock or broth
Heat oven 350. In med skillet melt margarine over med high heat; stir in onions and garlic. Cook until onions are tender; stir in spinach. Continue cookingt l to 2 mins; remove from heat. Cool. Stir Swiss cheese into spinach mix. Carefully pound chicken to flatten. Divide spinach mix evenly among hcicken breasts. Roll up enclosing filling. You can secure with picks or follow further directions for “Better Than Sex Chicken”.
