SPINACH AND CHEESE CASSEROLE

l l0 oz. pkg. frozen chopped spinach, thawed, undrained
l l6 oz. container small curd cottage cheese’4 ozs. Gorgonzola, or grated sharp cheddar or Swiss cheese
l/2 stick butter melted
3 tbsps. flour
5 large eggs, beaten to blend
Preheat oven 350. Butter 6 to 8 cup souffle dish. Place spinach in large bowl. Mix in cottage cheese. grated Gorgonzola or other cheese, melted butter and flour. Season to taste with s&p. Add eggs and stir until well blended. Trtansfer mixture to prepared dish. Bake until spinach mixture is set in center, about l hr. l5 mins. Let stand l0 mins. before serving. You can increase amount of cheese to 6 ozs. if desired.
