SPICED PORK TENDERLOIN

l tsp. salt
l garlic clove, minced
l/2 tsp. white pepper
l/4 tsp. dried thyme, crumbled
Pinch of ground allspice
l l20oz. pork tenderloin
2 tbps. vegetable oil
l/2 cup milk (do not use lowfat or nonfat)
l/4 cup brandy
Combine salt, garlic, white pepper, thyme & allspice in small bowl.
Rub salt mixture into pork. Wrap pork in plastic wrap and refriger-
ate 4 hrs. or overnight. Preheat oven to 325. Heat oil in heavy
large ovenproof skillet over med-high heat. Add pork & cook until
brown on all sides, turning occasionally about 5-6 mins. Place
skillet with pork in oven & bake to desired doneness, about 30 mins.
for mediu. Transfer pork to platter. Cover with foil & keep warm.
Add milk & brandy to same skillet. Bring to boil over high heat.
Continue boiling until liquid is reduced to l/4 cup, scraping up any
browned bits on bottom of pan, about 8 mins. Slice pork and serve
immediately with sauce.
