In med saucepan cover 3 lbs. new red potatoes, cut into chunks with salted water; bring to a boil. Reduce heat; simmer until fork tender – l0-l5 mins. Drain and return to pot. Add l stick butter, 3/4 cup milk, 3/4 tsp. salt and l/4 tsp. pepper to the potatoes. Using a potato masher or fork, mash potatoes until chunky. Mix in 3 tbsps. chopped chives or scallion greens. Serve garnished with more chopped chives.
