2 racks pork spareribs (abou 6-l/2 lbs.)
l cup dry sherry
l/2 cup soy sauce
l/4 cup sesame oil
l/4 cup mango chutney
2 tbsps. honey
2 green onions finely chopped
l tbsps. finely chopped peeled fresh ginger
4 large garlic cloves minced
l tsp. cayenne peper
Arrnage rib racks in large roasting pan. Whisk all remaining ingredients in bowl. Pour marinade over ribs turning to coat. Cover; chill overnight, turning ribs once. Position l oven rack on top third of oven and l rack in bottom third of oven; heat to 300. Drain ribs; reserve marinade. Transfer marinade to saucepan; bring to boil. Remove from heat. Place each rack of ribs on large rimmed baking sheet. Place l baking sheet on each rack in oven. Bake ribs until tneder, basting with l/4 cup marinade every 20 mins. and covering edges of ribs with strips of foil to protect from burning if necessary about 3 hrs. total. Cut between bones in separate ribs. Transfer to platter, serve. Serves 4 Bon Appetit Feb. 200l
