3 tbsp butter
3 tbsp olive oil
6 large garlic cloves, minced
1 lb mushrooms, sliced
2 tbsp tomato paste
1/4 cup dry white wine
1/4 cup fresh lemon juice
1 lb medium shrimp, peeled & deveined
1 bunch green onions, sliced
1 lb bay scallops
1/3 cup chopped parsley
Melt butter w/ olive oil in heavy large skillet over med heat. Add
minced garlic cloves & saute’1 min. Increase heat to high, add
sliced mushrooms & saute’ until just beginning to soften, about 5
min. Add tomato paste & stir 30 sec. Add dry white wine & fresh
lemon juice & bring to the boil. Add shrimp & sliced green onions
& stir 1 min. Add scallops & stir 1 min. Add scallops & stir until
shrimp & scallops arer cooked through, about 3 min. Season w/ S&P.
Sprinkle w/ chopped fresh parsley & serve immediately.
