SHRIMP/CUCKUMBER SALAD/DILL DRES.

l cup water
l/2 cup dry white wine
juice and rind of l/2 lemon
3/4 lb. med shrimp, peeled, deveined
l/4 cup mayo
l/4 cup red onion, diced
2 tbspss. freshlemon juice
l tbsps. chopped fresh parsley
l tbsps. chopped fresh dill
2 tsp. suga
minded zest of l lemon s&p and cayenne to tase
l/2 cup cucumber, diced
avaocado halves, pitted
simmer water, wine, lemon juice and rind in saucepan over med high heat. add shrimp and cook 3 mins. remove from heat and le stand until shrimp are pink and firm, about 3 more mins. drain well. combine mayo, onion, lemon juice, herbs, sugar, lemon zest and seasonings in a bowl. add shrimp and cucumber; toss to coat and chill until cold. to serve spoon salad into the center of avocado halves or onto lettuceleaves. makes about 2-l/2 cups. Cuisene at home
