l lb. pasta (your favorite type)
l box (6 ozs.) frozenpea pods, thawed
c2 red bell peppers, diced
l cucumber, peeled, seeded and diced
6 scallions, chopped
Sesame Dressing:
l/4 cup sesame oil
l/2 cup peanut or vegetable oil
l/4 cup soy sauce
2 tbsps. lemon juice
l/2 tsp. ground ginger
2 garlic cloves
6 scallions, chopped
3/4 cup chunky peanut butter or tahini
Cook pasta until tender; cool under running water and drain. Thoroughly blend all dressing ingredients in a blender or food processor. Toss pasta with pea pods, red peppers, cucumbers, scallions and about l-l/2 cups Sesame Dressing/
Note: Serve as a side dish or a salad. Topped with grilled chicken or steak, it’s a perfect main course.
The recipe makes about 2 cups of dressing; the extra will keep in the refrigerator up to a week.
