Heat oven 450. Quarter and cut 3 zucchini (l-l/2 lbs.) into l-l/2″ chunks. Thinly slice l onion. In a rimmed baking sheet toss zucchini and onion with 2 tbsps. olive oil, l tsp. dried thyme, l/2 tsp. salt and l/89 tsp. pepper. Roast 30 mins. tossing halfway through. Serves 4. Martha Good Food
