ROASTED SWEET POTATOES WITH HONEY GLAZE

2-l/4 lbs. red skinned sweet potatoes (yams) peeled, cut into l-l/2″ pieces (about 7 cups)
6 tbsps. butter
3 tbsps. honey
l tsp. lemon juice
Heat oven 350. Arrange sweet potatoes in l3x9″ dish. Stir butter, honey and lemon juice in small sacuepan over med heat until butter melts. Pour butter mix over potatoes; toss to coat. Sprinkle gneerously with s&0. Bake until tender when pierced with skewer stirring and turning occasionally, about 50 mins.

Goes very good with pork.
