3 lbs. red skined potatoes, quartered
6 tbsps. olive oil
3 garlic cloves, minced
l tbsps. dried rosemary
l tbsps. dried thyme
Prehat oven 500. Place potatoes in large bowl. Add o8l and garlic and toss to coat. Add herbs and toss again. Season with s&-p. Divide potatoes between 2 heavy large baking sheets. Bake until brown and crisp, stirring occasionally, about 30 mins.
