Roasted Garlic Fingerling Potatoes

Inactive Prep Time:
* 1 1/2 pounds fingerling potatoes
* 4 tablespoons olive oil
* 8 garlic cloves, sliced
* 1 tablespoon freshly chopped Italian parsley leaves
* Salt and freshly ground black pepper
Preheat the oven to 350 degrees F.
In a casserole dish, mix together the potatoes, oil, garlic, parsley, salt, and pepper. Roast for 20 minutes or until the potatoes are tender.
