ROASTED CARROTS AND LEEKS MARTHA

heat oven 375. trim and discard dark green parts from l bunch leeks (about l lb.). Halve leeks lengtyhwise and cut crosswise into l” pieces. Rinse wll in cold water to remove grit. On a rimmed baking sheet toss leeks with l-l/2 lbs. large carrots cut into l” CHUNKS and 2 tbsps. olive oil; season with l tsp. salt and l/4 tsp. pepper. Spread in single layer; roast until veggies are golden and tender tossing halfway through, about 40 mins.
