RISSOLI POTATOES

l-l-l/2 lbs. small red potatoes, peeled
6 tbssps. butter
l tbspss. chopped fresh parsley
l tbsps. micned fresh chives

Pstnoil potatoes in a saucepan for l0 mins; drain. Mlet 4 tbssp, of the butter in a saute pan. Add taters, cover, and cook l0 mins. Swirl the pan occasionally to stir, holding the cover in place. Uncover and increase heat to med-high. Saute l0 mins. turning potatoes until golden brown on sall sides. Toss with butter, herbs and seasonings before serving.
