l-l/4 cups water
l-l/2 cups Minute instant brown rice
l/2 cup lowfat milk
l cup grated carrots
2 tbsps. chopped or sliced scallions
l/2 tsp. salt
l/4 tsp. finely chopped fresh ginger (optional) (or l/4 tsp.ground)
Dash of pepper
4 flounder fillets (4 oz. each)
l tbsps. margarine
Bring water to a boil. Stir in rice. Cover, reduce heat and simmer
5 mins. Remove from heat and let stand 5 mins. Add milk, carrots,
scallions, salt, ginger and pepper. Spread evenly over fillets.Fold
fillets in half and place in 8″ baking dish. Place any remaining
rice mixture in center of dish. Dot with margarine and bake at 350
for l5 mins. or until fish is easily flaked with a fork.
Serves 4.
