l l6-oz.cansauerkraut, rinsed & drained
l l2-oz. can corned beef or l2 oz. cooked corn beef
2-l/2 cups shredded Swiss cheese
2/3 cup mayo
l/3 cup Thousand Island dressing
2 med. tomatoes, peeled & thinly sliced
l/3 cup rye bread crumbs, toasted
l/4 stick butter, melted
Arrange sauerkraut in bottom of l-l/2 qt. glass baking dish. Layer
corned beef & cheese over sauerkraut. Combine mayo & dressing in a
small bowl. Spread evenly over cheese. Cover with Tomato slices.
Toss crumbs with melted butter & sprinkle over casserole. Heat at
350 for about 20-25 mins. or until heated through.
Serves 4 to 6. Can be doubled.
