RED VELVET CAKE

2 cups sugar
l tsp. salt
2 cups salad oil
4 eggs, beaten’
l cup buttermilk
l tsp. vinegar
2 tsp. vanilla
l (2 0z.) bottle red food coloring
3 cups cake flour
3 tsp. cocoa
l tsp. soda
l med. size can crushed pineapple, drained
Cream sugar and oil in mixing bowl. Add eggs and beat well. Add vinegar and food coloring. Sift flour, soda,
salt and cocoa together and add to cream ed mixture. Add buttermilk slowly; mix thoroughly. Then add vanilla
and drained pineapple and beat well. Pour into greased and floured cake pans. Grease & flour 2 9″ round
cake pans. Bake at 350 for about 30 mins.
Filling: l-l/2 sticks oleo
l 8 oz. pkg. cream cheese
l box powdered sugar
l cup chopped nuts
Cream oleo and cream cheese in a bowl. Add vanilla. Sift powdered sugar and add gradually to creamed
mixture. Add nuts and mix well. Spread on cake layers and on top. Prodigy
