l tsp. butter or oil for loaf pan
l lb. high quality bacon
2 cups flour
2 tbsps. sugar
2 tsp. baking powder
l tsp. baking soda
3/4 tsp. salt
l/4 tsp. pepper
2 ewggs
l/4 cup milk
l cup sour cream
Heat oven 350. Grease an 8-l/4×4-l/2″ loaf pan with l tsp. butter or oil. Cook the bacon, in batches if
necessary in a large skillet over high heat until crisp. Place it on paper towels to drain and cool.
eserve 2 tbsps. of bacon fat from the skillet. Crumble the bacon. In a large mixing bowl combine the
flour, sugar, baking powder, baking soda, s&p. In a small bowl beat the eggs slightly. Whsik in the
milk and sour cream. Add the reserved bacon fat and mix until smooth. Pour the egg mix into the
dry ingredients. Add the reserved crumbled bacon and stir just to combine (the batter can be slightly
lumpy). Pour batter into prepared loaf pan and bake for 50 mins to l hr. or until fork comes out clean.
Lety cool on rack 5-l0 mins until cool then turn out onto rack tp cool completely. Serve toasted if
