l lb. boiling potatoes (about 3)
l/2 lb. turnips (about 2) peeled & grated coarse in food processor
l/3 cup heavy cream
l/3 cup chicken broth plus additional for thinning puree if nec.
l garlic clove
l tbsp. minced fresh chives or scallion greens or to taste
l tbsps. butter
2 tbsps. grated Parmesan
Peel the taters, grate them coarse in processor (there should be
about 3 cups) & in large sieve rinse them under cold water. In a
3-qt. microwave casserole with a lid stir together taters, the
turnips, cream, l/3 cup broth & garlic, microwave mixture covered
for 2 mins. Force the mixture through a ricer or medium disk of a
food mill into a bowl and stir in chives, butter, additional broth,
& s & p to taste. Spread mixture in a 7″ (l-l/2 cup gratin dish),or
shallow baking dish, sprinkle with Parmesan and broil under preheate
d broiler about 4″ from heat for 2to 3 mins. or until top is golden.
