2 cups whipping cream
l 5-oz. package Boursin cheese withherbs
3 lbs.red new potatoes (unpeeled) scrubbed, thinly sliced
l-l/2 tbsp. fresh chopped parsley

Preheat oven to 400. Butter 9xl3″ baking dish with 2″ sides. Stir
whipping cream & Boursin cheese in heavy large saucepan over med.
heat until cheese melts and mixture is smooth. Arrange half of
sliced potatoes in baking dish in slightly overlapping rows.
Generously season potatoes with s&p. Pour half of cheese mixture
over. Arrange remaining potatoes in overlapping rows atop potatoes
in dish. Generously season with s&p. Pour remaining cheese mixture
over potatoes. Bake until top is golden brown & potatoes are tender
when pierced with knife, about l hour. Sprinkle with chopped parsley
and serve.
Serves 8.
