4lbs. yikon gold potatoes peeled adn halved (quartered if large)
l small butternut squash (2 lbs.) peeled seerded and cut into 2″ chunks (6 cups)
salt and pepper
6 tbsps. butter
2 garlic cloves minced
l cup half and half
in large pot combine taters and swuash; cover with salted water by l inch. bring to a boil; rreduce heat and simmer until taters and sqwuash are easily pierced with the tip of paring knife about 20 mins.
Drain in large colander; return veggies to the pot. stir over med heat until dry, 2 to 3 mins. remove from heat.
In a smsll saucepan melt butter over med heat; add galic, and cook until fragrant about 2 mins. add half and half, bring to a simmer. Pour over potatoes and squash; season generously with s&p. mash with potato masher until smooth and creamy. serve immediately.
