PORK TENDERLOIN (SPICED)

1 12 oz pork tenderloin
2 tbsp vegetable oil
1/2 cup milk (do not use lowfat or nonfat)
1/4 cup brandy
1/2 tsp Julia’s pork spices

Rub pork spices thoroughly onto pork & wrap in plastic & refrig-
erate 4 hrs or overnight. Preheat oven to 325F. Heat oil in heavy
ovenproof skillet over med-high heat. Add pork, cook until brown on
all sides, turning occasionally,, about 5-6 min. Place skillet with
pork in oven & bake to desired doneness, about 30 min for medium.
Transfer pork to platter. Cover w/ foil to keep warm. Add milk &
brandy to same skillet. Bring to the boil over high heat. Continue
boiling until liquid is reduced to 1/4 cup, scraping up any brown
bits on bottom of pan, about 8 min. Slice pork & serve immediately
w/ sauce.
serves 2 (if larger portioon of pork is used, increase
(milk & brandy for more sauce)
