l tbsps. vegetable oil
4 red delicious apples, peeled, cored, cut into l/3″ thick wedges
l/4 cup Grand Marnier or other orange liqueur
l-l/4 cups canned chicken broth
4 tbsps. chopped fresh parsley
3 tbsps. honey
l tsp. grated orange peel
4 ;l-l/4″ thick rib pork chops
Melt butter with oil in heavy skillet over med=high heat. Add apples and saute until tender and golden, about l0 mins. Add liqueur and bring to boil. Add broth, 2 tbsps. parsley, honey & orange peel. Simmer until liquid is slightly thickened, about 5 mins. Remove sauce from heat. Season to taste with s&0. (Can be prepared l day ahead. Cover & refrigerate) Position rack 6″ from heat and preheat broiler. Sprinkle pork with s&0l Arrange on aking sheet or broiler pan. Broil until pork is no longer pink inside, aobut 7 mins. per side. Transfer pork to plates. Bring sauce to simmer. Spoon over pork Sprinkle with remaining 2 tbsps. parsley and serve.
