4 3/4 INCH THICK CENTER CUT PORK CHOPS l
l tbsp. vegetable oil
2 tbsps. butter
l large onion, thinly sliced
l small tart apple, cored, thinly sliced
l/2 cup apple cider
l-l/2 tbsps. apple cider vinegar
l bay leaf
Season pork chops generously with s & p. Heat oil in heavy large
skillet over medium high heat. Add pork to skillet and cook until
brown and cooked through, about 5 mins per side. Tramsfer pork to
platter. Tent with foil to keep warm. Drain off all but l tbsp. drip
pings from skillet. Add butter to skillet & melt over medium heat.
Add onion & apple to skillet & saute until onion is almost soft,
about 5 mins. Mix in cider, vinegar & bay leaf. Cover skillet and
cook until onions & apples are tender, about l0 mins. Discard bay
leaf. Add any accumulated juices from pork chop platter to skillet.
Increase heat & cook until sauce trhickens slightly about 3 mins.
Spoon sauce over chops.
