PENZY’S POTATOES AU GRATIN

med. potatoes (4 cups sliced)
l/4 cup butter
l med. onion minced
l tbsps. flour
l tsp. salt
l/4 tsp. granulagted garlic’
l/4 tsp. pepper
2 cups milk
2 cups grated cheddar (l/2 lb.)
divided
l/4 cup bread crumbs
l tsp. sweet paprika
Heat oven 325. Peel potatoes and cut into thin circle slices place in layers in 2 qt. carrersold dish. Heat butter in nonstick pan over med-high heat. Add onions, cook for 3/4 mins. until onions are soft and translucent (don’t let them brown toomuch) posuy the onions to the side, stir in flour, salt, garlic and pepper. Reduce heat to low, cook stirring until mixture is bubbly and thick, stir to blend onions back in, remove from heat. Add milk and l-l/2 cup cheese, return to stove heat to boiling over med-high heat, stirring constantly. Once sauce has reached a boil cook 2 mins, remove from heat and pour carefully over potatoes. Bake uncovered at 325 for l hour and 20 mins. then top with remaining l/2 cup cheese and l/4 cup breadcrumbs. Sp;rinkle paprika on top. Return to oven and bake until browned on top which will be about l5-20 mins

more, though this is a dish that is forgiving. It can cook longer or rest for up to 30 mins. before serving and it will still be hot, moist and tastey.
Serves 6 to 8.
