l cup peanut butter creamy or chunky
l cup sugar
l large egg
l tsp. baking soda
Heat oven 350 and grease baking sheets. In bowl with electric mixer eat together peanut butrter and sugar until combined well. In small bowl lightly beat egg and beat into peanut butter mixture with baking soda until combined well. Roll level tsps. of dough into balls and arrange about l” apart on baking sheets. Wtih tines of a fork flatten balls to about l-l/2″ in diameter, making a crosshatch pattern. Bakie cookies in batches in middle of oven until puffed and pale golden, about l0 mins. Cool cookies on sheets 2 mins. and transfer with spatula to rack to col completely. Makes about 70 cookies Gourmet
