PEANUT BUTTER/CHOCOLATE CHIP CUPCAKES

l cup all purpose flour
l-l/2 tsp. double acting b aking powder
l/2 cup firmly packed dark brown sugar
l/4 cup chunky peanut butter
3 tbsps. butter, softened
l large egg
l/2 tsp. vanilla
l/2 cup milk
l-l/4 cups semisweet chocolate chips
l/4 cup heavy cream
In a bowl whisk together flour, baking powder and a pinch of salt.
In another bowl with electric mixer cream together the brown sugar,
peanut butter & butter and beat in the egg and vanilla. Beat in the
flour mixture alternately with the milk, beating well after each
addition, and stir in l/2 cup of the chocolate chips. Divide the
batter among l2 paper lined l/2 cup muffin tins and bake the cupcake
in the middle of preheated 350 oven for 20-25 mins, or until tester
comes out clean. Turn the cupcakes out onto a rack and let cool.
In another bowl combine the reamining 3/4 cup chocolate chips and
the cream, scalded, let the chips soften, and whisk the mixture unti
l it is smooth. Let the icing cool compoetely, whisk it until it is
fluffy and spread it on the cupcakes.
Makes l2 cup cakes.
